Ingredients

- 1 cup mascarpone cheese
- 1/2 cup heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 tablespoon instant espresso powder
- 1 cup ladyfinger crumbs
- 1/2 cup cocoa powder
Instructions
- In a bowl, mix mascarpone cheese, heavy cream, powdered sugar, and vanilla extract until smooth.
- Dissolve instant espresso powder in a tablespoon of hot water and add to the mascarpone mixture.
- Fold in the ladyfinger crumbs until well combined.
- Chill the mixture in the refrigerator for 15 minutes.
- Roll the mixture into small balls and coat each truffle with cocoa powder.
- Refrigerate the truffles for at least 10 minutes before serving.
Notes
- For a stronger coffee flavor, increase the amount of instant espresso powder.
- These truffles can be stored in the refrigerator for up to a week.
- Feel free to experiment with different coatings, such as crushed nuts or chocolate sprinkles.
