Ingredients
- Boneless chicken breast (1 lb), cut in strips
- Soy sauce, low-sodium (¼ cup)
- Honey (¼ cup)
- Rice vinegar (2 tbsp)
- Fresh garlic, minced (2 cloves)
- Grated ginger (1 tsp)
- Red pepper flakes (½ tsp, optional)
- Salt and black pepper
- Brussels sprouts, halved (1 lb)
- Olive oil (1 tbsp)
- Salt and pepper
- Green onions, sliced (optional)
- Sesame seeds (optional)
Instructions
- Marinate Chicken: Mix soy sauce, honey, vinegar, garlic, ginger, and pepper flakes. Season with salt and pepper. Toss in chicken, coat well, and chill for 30 minutes or more.
- Roast Brussels Sprouts: Heat oven to 400°F. Toss sprouts with oil, salt, and pepper. Spread on a tray and roast for 15–20 minutes, stirring halfway.
- Cook Chicken: Heat oil in a pan over medium-high. Cook chicken pieces 2–3 minutes per side until fully done. Optional: Simmer leftover marinade in a small pan for 3–4 minutes to make a glaze.
- Assemble Bowls: Add roasted sprouts to bowls, top with chicken, and drizzle glaze if using.
- Garnish (Optional): Sprinkle sesame seeds or green onions on top.

- For a spicier kick, increase the amount of red pepper flakes.
- Ensure chicken is cooked through before serving.
