Ingredients

  • Boneless chicken breast (1 lb), cut in strips
  • Soy sauce, low-sodium (¼ cup)
  • Honey (¼ cup)
  • Rice vinegar (2 tbsp)
  • Fresh garlic, minced (2 cloves)
  • Grated ginger (1 tsp)
  • Red pepper flakes (½ tsp, optional)
  • Salt and black pepper
  • Brussels sprouts, halved (1 lb)
  • Olive oil (1 tbsp)
  • Salt and pepper
  • Green onions, sliced (optional)
  • Sesame seeds (optional)

Instructions

  1. Marinate Chicken: Mix soy sauce, honey, vinegar, garlic, ginger, and pepper flakes. Season with salt and pepper. Toss in chicken, coat well, and chill for 30 minutes or more.
  2. Roast Brussels Sprouts: Heat oven to 400°F. Toss sprouts with oil, salt, and pepper. Spread on a tray and roast for 15–20 minutes, stirring halfway.
  3. Cook Chicken: Heat oil in a pan over medium-high. Cook chicken pieces 2–3 minutes per side until fully done. Optional: Simmer leftover marinade in a small pan for 3–4 minutes to make a glaze.
  4. Assemble Bowls: Add roasted sprouts to bowls, top with chicken, and drizzle glaze if using.
  5. Garnish (Optional): Sprinkle sesame seeds or green onions on top.
