- 2 medium zucchini, sliced into half-moons
- 8 oz (225 g) cremini or white button mushrooms, sliced
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/4 teaspoon crushed red pepper flakes (optional, for heat)
- Salt and black pepper, to taste
- 2 tablespoons grated Parmesan cheese (optional, for garnish)
- 1 tablespoon chopped fresh parsley (optional, for garnish)
Instructions
- Heat the olive oil or butter in a large skillet over medium heat.
- Add the sliced mushrooms to the skillet and cook for 5-7 minutes, stirring occasionally, until they release their moisture and begin to brown.
- Stir in the zucchini and cook for 5-7 minutes, or until the zucchini is tender but still slightly crisp.
- Add the minced garlic, Italian seasoning, crushed red pepper flakes (if using), salt, and black pepper. Cook for 1-2 minutes, stirring frequently, until the garlic is fragrant.
- Remove the skillet from heat. Sprinkle with Parmesan cheese and fresh parsley, if desired.
- Serve warm as a side dish or enjoy on its own for a light meal.

- For extra flavor, squeeze a bit of fresh lemon juice over the dish before serving.
