Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 lb linguine
  • ½ cup butter
  • ¼ cup olive oil
  • 6 garlic cloves, minced
  • ¼ cup grape juice
  • ¼ cup lemon juice
  • ¼ cup fresh parsley, chopped
  • ¼ tsp red pepper flakes
  • Salt and black pepper to taste
  • ½ cup grated Parmesan
  • ¼ cup breadcrumbs

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Boil linguine, drain, and set aside.
  3. In an oven-safe skillet, melt butter with olive oil over medium heat. Add garlic and red pepper flakes, cook for 1 minute. Toss in shrimp and cook until pink, about 3–5 minutes.
  4. Pour in grape juice and lemon juice. Scrape the skillet and simmer until slightly thickened.
  5. Add cooked pasta, parsley, and half the Parmesan. Stir well, then transfer to the oven. Bake for 10–15 minutes until hot and bubbly.
  6. Top with remaining Parmesan and breadcrumbs. Broil 1–2 minutes until golden and crisp. Serve right away.

Notes

  • For a spicier dish, increase the amount of red pepper flakes.
  • Feel free to substitute shrimp with chicken or vegetables for a different variation.
