- 3 medium roasted beets, sliced
- 1 large pear, thinly sliced
- ½ cup crumbled blue cheese
- ¼ cup chopped toasted pecans
- 1 tbsp honey
- 1 tbsp balsamic glaze
- 1 tbsp olive oil
- Fresh thyme for garnish
Instructions
- Roast whole beets at 400°F wrapped in foil for 45–50 mins. Cool, peel, and slice.
- Sauté pear slices in olive oil for 2 mins per side. Drizzle with honey and caramelize lightly.
- Stack beet, blue cheese, and pear slices. Repeat layers.
- Top with extra blue cheese.
- Sprinkle pecans and drizzle with balsamic glaze.
- Garnish with thyme and serve warm.
