Ingredients

  • 1/2 cup melted butter
  • 1 box (3.4 oz) pistachio instant pudding mix
  • 8 oz cream cheese, softened
  • 3 large eggs
  • 1 large egg (separate from above)
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 1/2 cup chopped pistachios (for topping)

Instructions

  1. Preheat oven to 350°F and grease a 9×13-inch baking dish.
  2. Mix cake mix, melted butter, and 1 egg until combined. Press into the bottom of the dish.
  3. In another bowl, beat cream cheese until smooth.
  4. Add remaining 3 eggs, vanilla, pudding mix, and powdered sugar. Mix until creamy.
  5. Pour cream cheese layer over the crust.
  6. Sprinkle chopped pistachios on top.
  7. Bake for 40–45 minutes until edges are golden and center is just set.
  8. Let cool for 30 minutes before cutting.
