- 1 box yellow cake mix
- 1/2 cup melted butter
- 1 box (3.4 oz) pistachio instant pudding mix
- 8 oz cream cheese, softened
- 3 large eggs
- 1 large egg (separate from above)
- 1 teaspoon vanilla extract
- 1 cup powdered sugar
- 1/2 cup chopped pistachios (for topping)
Instructions
- Preheat oven to 350°F and grease a 9×13-inch baking dish.
- Mix cake mix, melted butter, and 1 egg until combined. Press into the bottom of the dish.
- In another bowl, beat cream cheese until smooth.
- Add remaining 3 eggs, vanilla, pudding mix, and powdered sugar. Mix until creamy.
- Pour cream cheese layer over the crust.
- Sprinkle chopped pistachios on top.
- Bake for 40–45 minutes until edges are golden and center is just set.
- Let cool for 30 minutes before cutting.

- Ensure the cream cheese is softened for easier mixing.
- Let the cake cool completely for better slicing.
