Description

A delicious and easy one-pan meal featuring balsamic chicken, green beans, and baby potatoes, perfect for a weeknight dinner.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 pound baby potatoes, halved
  • 1 pound green beans, trimmed
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper
  • Fresh parsley, chopped for garnish

Instructions

  1. Set your oven to 400°F (200°C) and let it preheat.
  2. In a large bowl, combine balsamic vinegar, olive oil, honey, minced garlic, and oregano. Add salt and pepper as you prefer.
  3. Submerge the chicken breasts in the marinade, ensuring they’re thoroughly coated, and let them sit for at least 15 minutes.
  4. In the meantime, place the halved baby potatoes on a large baking sheet. Drizzle with olive oil, season with salt and pepper, and toss to coat evenly.
  5. Place the potatoes in the preheated oven and roast for 15 minutes.
  6. After 15 minutes, take the baking sheet out. Move the potatoes to one side and place the marinated chicken breasts on the empty side.
  7. Return the sheet to the oven and roast for another 20 minutes.
  8. After 20 minutes, add the green beans to the baking sheet. Toss them slightly to mix with the chicken and potatoes.
  9. Continue roasting for another 10-15 minutes, until the chicken reaches an internal temperature of 165°F (75°C) and the vegetables are tender.
  10. Take the dish out of the oven and let it rest for a few minutes. Finish by garnishing with chopped fresh parsley before serving.
