  • 10 cups low-sodium chicken broth
  • 1 cup ditalini pasta
  • 1/3 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • Baby spinach and herbs for garnish

Instructions

  1. In a large pot over medium-high heat, add oil and sauté carrots, onion, and garlic for about 3 minutes.
  2. Add chicken pieces and cook until lightly browned (about 3 minutes).
  3. Stir in tomato paste and sun-dried tomatoes. Pour in chicken broth with Italian seasoning, salt, pepper, and red pepper flakes; bring to a boil then simmer for 10 minutes.
  4. Add ditalini pasta and simmer for another 10 minutes while stirring occasionally.
  5. Stir in heavy cream and Parmesan cheese; add baby spinach and let sit off heat for an additional 5 minutes before serving.
