- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- Juice and zest of 1 lemon
- 3 garlic cloves, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and black pepper, to taste
- 1 cup cherry tomatoes, halved
- 1 medium zucchini, sliced
- 1 red bell pepper, sliced
- 1 cup broccoli florets
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Season the chicken breasts with salt, pepper, paprika, oregano, and thyme.
- Sear the chicken in the skillet for 6–7 minutes on each side until golden brown and fully cooked. Transfer to a plate and set aside.
- In the same skillet, add the minced garlic and sauté for about 30 seconds until aromatic.
- Add the cherry tomatoes, zucchini, red bell pepper, and broccoli. Cook for 5–7 minutes, stirring occasionally, until the vegetables are tender-crisp.
- Return the chicken to the skillet. Drizzle with lemon juice and zest, tossing gently to coat everything in the bright flavors. Let it warm through for 2–3 minutes.
- Sprinkle with chopped fresh parsley just before serving.
Notes
- For added flavor, marinate the chicken in lemon juice and herbs for a few hours before cooking.
- Feel free to substitute any seasonal vegetables you have on hand.
