Description

A flavorful and healthy dish featuring chicken breasts cooked with fresh vegetables and a zesty lemon herb sauce.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Juice and zest of 1 lemon
  • 3 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and black pepper, to taste
  • 1 cup cherry tomatoes, halved
  • 1 medium zucchini, sliced
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season the chicken breasts with salt, pepper, paprika, oregano, and thyme.
  3. Sear the chicken in the skillet for 6–7 minutes on each side until golden brown and fully cooked. Transfer to a plate and set aside.
  4. In the same skillet, add the minced garlic and sauté for about 30 seconds until aromatic.
  5. Add the cherry tomatoes, zucchini, red bell pepper, and broccoli. Cook for 5–7 minutes, stirring occasionally, until the vegetables are tender-crisp.
  6. Return the chicken to the skillet. Drizzle with lemon juice and zest, tossing gently to coat everything in the bright flavors. Let it warm through for 2–3 minutes.
  7. Sprinkle with chopped fresh parsley just before serving.

Notes

  • For added flavor, marinate the chicken in lemon juice and herbs for a few hours before cooking.
  • Feel free to substitute any seasonal vegetables you have on hand.
