- 1 pound Italian sausage, casings removed
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 carrots, diced
- 2 celery stalks, diced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes (optional)
- 6 cups chicken broth
- 1 cup orzo pasta
- 1 can (14.5 oz) diced tomatoes, undrained
- 2 cups fresh spinach
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- In a large pot, heat olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it up with a spoon, about 5-7 minutes.
- Add the chopped onion, garlic, carrots, and celery to the pot. Sauté for 5-6 minutes, or until the vegetables are softened.
- Stir in the dried oregano, dried basil, and red pepper flakes (if using). Cook for an additional minute until fragrant.
- Pour in the chicken broth and add the diced tomatoes. Bring the mixture to a boil.
- Once boiling, add the orzo pasta and reduce the heat to a simmer. Cook for 8-10 minutes, or until the orzo is tender.
- Stir in the fresh spinach and cook for another 2-3 minutes until wilted. Season with salt and pepper to taste.
- Serve hot, garnished with grated Parmesan cheese.

- Feel free to add other vegetables like zucchini or bell peppers for extra flavor.
- This soup can be stored in the refrigerator for up to 3 days.
- For a spicier kick, increase the amount of red pepper flakes.
