Description

A hearty and flavorful Italian sausage orzo soup that combines savory sausage, fresh vegetables, and tender orzo pasta in a delicious broth.


Ingredients

  • 1 pound Italian sausage, casings removed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • 6 cups chicken broth
  • 1 cup orzo pasta
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 2 cups fresh spinach
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it up with a spoon, about 5-7 minutes.
  2. Add the chopped onion, garlic, carrots, and celery to the pot. Sauté for 5-6 minutes, or until the vegetables are softened.
  3. Stir in the dried oregano, dried basil, and red pepper flakes (if using). Cook for an additional minute until fragrant.
  4. Pour in the chicken broth and add the diced tomatoes. Bring the mixture to a boil.
  5. Once boiling, add the orzo pasta and reduce the heat to a simmer. Cook for 8-10 minutes, or until the orzo is tender.
  6. Stir in the fresh spinach and cook for another 2-3 minutes until wilted. Season with salt and pepper to taste.
  7. Serve hot, garnished with grated Parmesan cheese.

  • Feel free to add other vegetables like zucchini or bell peppers for extra flavor.
  • This soup can be stored in the refrigerator for up to 3 days.
