A delicious and easy-to-make chicken fajitas recipe by Gordon Ramsay, perfect for a quick weeknight dinner.

- 3 boneless skinless chicken breasts (about 450g)
- 3 bell peppers, thinly sliced
- 1 large onion, thinly sliced
- 2 tbsp (30ml) olive oil
- ½ lime, juiced
- ½ tbsp chili powder
- ½ tbsp ground cumin
- 1 tsp garlic powder
- ½ tsp paprika
- ½ tsp dried oregano
- ½ tsp kosher salt
- ¼ tsp ground black pepper
Instructions
- Mix all fajita seasoning ingredients in a small bowl. Rub evenly over both sides of the chicken breasts.
- Heat 1 tbsp olive oil in a skillet over medium-high. Cook chicken for 7–8 minutes per side until golden and cooked through. Let rest.
- In the same skillet, add 1 tbsp olive oil. Sauté the sliced peppers and onion for 4–5 minutes until softened but still vibrant.
- Thinly slice the rested chicken. Add back into the skillet with the veggies. Squeeze fresh lime juice over everything. Toss to combine.
- Warm up tortillas. Load them up with the chicken-veggie mix. Add toppings like sour cream, avocado, or pico de gallo.
Notes
- Feel free to customize the toppings based on your preference.
- For a spicier kick, add jalapeños to the veggie mix.
- Serve with a side of rice or beans for a complete meal.
