Description

Gooey Pecan Pie Brownie Bombs are delightful dessert bites that combine the rich flavors of brownies and pecan pie, creating a blissful treat.


Ingredients

  • 1 recipe for an 8×8 pan of brownies, prepared without nuts
  • 2/3 cup chopped pecans, plus more for garnish (optional)
  • 1 egg
  • 1 & 3/4 tablespoons granulated sugar
  • 1/3 cup corn syrup
  • 1 tablespoon unsalted butter, melted and cooled
  • Pinch of salt
  • 1 package chocolate almond bark, melted

Instructions

  1. Prepare your brownies according to the instructions on a box mix or your favorite homemade recipe, using an 8×8 pan.
  2. Let the brownies cool completely.
  3. Preheat your oven to 350°F (175°C) and lightly grease a small, 6-inch baking dish.
  4. Add the chopped pecans to the dish.
  5. In a separate bowl, whisk together the egg, sugar, corn syrup, melted butter, and a pinch of salt. Pour this mixture over the pecans in the dish.
  6. Tap the dish on the counter a few times to allow the pecans to rise to the top.
  7. Bake for 20 minutes until the filling is just slightly jiggly in the center. Allow it to cool completely.
  8. Cut the edges off the brownies to create an even texture and slice into 16 equal pieces.
  9. Flatten a brownie piece in your hand and add about 1 teaspoon of pecan pie filling to the center.
  10. Wrap the brownie around the filling, rolling it into a ball. Place the bombs on a parchment-lined tray and refrigerate for 1 hour to set.
  11. Dip each brownie bomb into melted chocolate almond bark, letting any excess chocolate drip off.
  12. Optionally, sprinkle additional chopped pecans on top.
  13. Chill in the fridge for about 5 minutes to harden the chocolate coating.

Notes

  • For dietary adjustments, you can use maple syrup instead of corn syrup.
  • Dairy-free chocolate can be used for coating if desired.
