Description
A delicious and creamy dish featuring cheese tortellini, chicken, and broccoli, all tossed in a garlic Parmesan sauce.
Ingredients
Scale
- 2 cups cheese tortellini
- 1 pound chicken breast, diced
- 2 cups broccoli florets
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Bring a large pot of salted water to a boil. Add the tortellini and cook according to package instructions until al dente. In the last 2 minutes of cooking, add the broccoli florets. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the diced chicken and season with salt and pepper. Cook for 5-7 minutes, or until the chicken is cooked through and no longer pink.
- Add the minced garlic to the skillet and sauté for 1-2 minutes, until fragrant.
- Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese until melted and the sauce is creamy.
- Add the cooked tortellini and broccoli to the skillet, tossing to coat everything in the creamy sauce. Cook for an additional 2-3 minutes to heat through.
- Serve immediately, garnished with fresh parsley.
Notes
- For a lighter version, you can use half-and-half instead of heavy cream.
- Feel free to add other vegetables like spinach or bell peppers.
- This dish is best served fresh but can be stored in the refrigerator for up to 3 days.
