A delicious and easy-to-make Garlic Parmesan Chicken Meatloaf that is perfect for family dinners.

- 1 ½ lbs ground chicken
- ¾ cup seasoned breadcrumbs
- ½ cup grated Parmesan cheese
- 2 large eggs
- 4 cloves garlic, minced
- ½ yellow onion, finely chopped
- ¼ cup milk
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ cup shredded mozzarella cheese (optional for topping)
- 1 tablespoon olive oil (for brushing)
Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
- In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, eggs, garlic, onion, milk, parsley, Italian seasoning, salt, and pepper. Mix gently until just combined—do not overmix.
- Shape the mixture into a loaf shape and place it on the prepared baking sheet or into the loaf pan.
- If desired, sprinkle shredded mozzarella cheese over the top and gently press it into the loaf.
- Brush the top of the meatloaf with olive oil to help create a golden crust.
- Bake for 45–50 minutes or until the internal temperature reaches 165°F (74°C).
- Let the meatloaf rest for 5–10 minutes before slicing. Serve warm with a side of mashed potatoes, veggies, or a fresh salad.
Notes
- Do not overmix the meatloaf mixture to keep it tender.
- Feel free to add your favorite herbs or spices for extra flavor.
- Leftovers can be stored in the refrigerator for up to 3 days.
