Description
A quick and delicious recipe for balsamic chicken served with veggie orzo.
Ingredients

- 4 boneless, skinless chicken breasts
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 cup cherry tomatoes, halved
- 1 zucchini, diced
- 1 bell pepper, diced
- 1 red onion, chopped
- 3 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and black pepper, to taste
- Fresh basil, chopped (for garnish)
Instructions
- In a large skillet, heat the olive oil over medium heat. Season the chicken breasts with oregano, salt, and black pepper.
- Cook the chicken for 5–7 minutes on each side, until golden brown and cooked through. Transfer to a plate and keep warm.
- Using the same skillet, add the garlic, cherry tomatoes, zucchini, bell pepper, and red onion. Sauté for 4–5 minutes until the vegetables soften.
- Stir in the orzo and pour in the chicken broth. Bring to a boil, then reduce heat to low. Cover and simmer for 10 minutes, or until the orzo is tender and most of the liquid is absorbed.
- Return the cooked chicken to the skillet and drizzle with balsamic vinegar. Let everything simmer together for 2–3 minutes to allow the flavors to blend.
- Garnish with fresh basil and serve hot.
Notes
- Feel free to add other vegetables based on your preference.
- This dish can be made ahead and reheated for a quick meal.
