Easy Balsamic Chicken & Veggie Orzo

Description

A quick and delicious recipe for balsamic chicken served with veggie orzo.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup cherry tomatoes, halved
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 1 red onion, chopped
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and black pepper, to taste
  • Fresh basil, chopped (for garnish)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Season the chicken breasts with oregano, salt, and black pepper.
  2. Cook the chicken for 5–7 minutes on each side, until golden brown and cooked through. Transfer to a plate and keep warm.
  3. Using the same skillet, add the garlic, cherry tomatoes, zucchini, bell pepper, and red onion. Sauté for 4–5 minutes until the vegetables soften.
  4. Stir in the orzo and pour in the chicken broth. Bring to a boil, then reduce heat to low. Cover and simmer for 10 minutes, or until the orzo is tender and most of the liquid is absorbed.
  5. Return the cooked chicken to the skillet and drizzle with balsamic vinegar. Let everything simmer together for 2–3 minutes to allow the flavors to blend.
  6. Garnish with fresh basil and serve hot.

  • Feel free to add other vegetables based on your preference.
  • This dish can be made ahead and reheated for a quick meal.
