A delicious and hearty recipe for stuffed bell peppers filled with ground meat, rice, and spices.
Ingredients

- 4 large bell peppers (any color)
- 1 lb ground meat (beef or turkey)
- 1 medium onion, chopped
- 1 cup cooked rice (white or brown)
- 1 can (14.5 oz) diced tomatoes, drained
- 1 tsp garlic powder
- 1 tbsp Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Wash bell peppers, cut off tops, and remove seeds.
- In a skillet over medium heat, cook ground meat and onions until browned; drain excess fat.
- In a bowl, mix cooked rice, tomatoes, garlic powder, Italian seasoning, and the meat mixture until combined.
- Stuff each pepper with the mixture and place upright in a baking dish.
- Cover with foil and bake for 25-30 minutes; remove foil for the last 5 minutes for a lightly charred top.
Notes
- Feel free to customize the filling with your favorite vegetables or spices.
- Leftovers can be stored in the refrigerator for up to 3 days.
