Description

A delicious and hearty recipe for stuffed bell peppers filled with ground meat, rice, and spices.


Ingredients

  • 4 large bell peppers (any color)
  • 1 lb ground meat (beef or turkey)
  • 1 medium onion, chopped
  • 1 cup cooked rice (white or brown)
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 tsp garlic powder
  • 1 tbsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Wash bell peppers, cut off tops, and remove seeds.
  3. In a skillet over medium heat, cook ground meat and onions until browned; drain excess fat.
  4. In a bowl, mix cooked rice, tomatoes, garlic powder, Italian seasoning, and the meat mixture until combined.
  5. Stuff each pepper with the mixture and place upright in a baking dish.
  6. Cover with foil and bake for 25-30 minutes; remove foil for the last 5 minutes for a lightly charred top.
