Description
A delicious and creamy dish featuring salmon fillets topped with a flavorful sauce made from spinach, roasted red peppers, and Parmesan.

- 2 salmon fillets (about 1 lb), skin-on
- 1 tbsp olive oil
- 1 tbsp butter
- 4 oz roasted red peppers, diced
- 4 cups baby spinach
- ½ cup Half & Half or heavy cream
- ¼ cup grated Parmesan
- ¼ cup chopped parsley
- 3 garlic cloves, finely diced
- ¼ tsp red pepper flakes (optional)
- Salt and black pepper to taste
Instructions
- Season fillets with salt and pepper. Heat oil in a skillet over medium heat. Cook salmon skin-side up for 5 minutes, then flip and cook until done. Remove and set aside.
- In the same skillet, melt butter. Add garlic and cook for 1 minute. Toss in roasted red peppers and sauté for 2 minutes.
- Add spinach and cook until wilted, stirring occasionally.
- Lower the heat. Pour in Half & Half, Parmesan, red pepper flakes, parsley, salt, and pepper. Simmer and stir until creamy.
- Add salmon back into the pan. Spoon sauce over the top and heat through. Serve with pasta, rice, or veggies.
Notes
- For a spicier kick, increase the amount of red pepper flakes.
- This dish pairs well with a side of garlic bread or a fresh salad.
