Description

A delicious and creamy dish featuring salmon fillets topped with a flavorful sauce made from spinach, roasted red peppers, and Parmesan.


Ingredients

  • 2 salmon fillets (about 1 lb), skin-on
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 4 oz roasted red peppers, diced
  • 4 cups baby spinach
  • ½ cup Half & Half or heavy cream
  • ¼ cup grated Parmesan
  • ¼ cup chopped parsley
  • 3 garlic cloves, finely diced
  • ¼ tsp red pepper flakes (optional)
  • Salt and black pepper to taste

Instructions

  1. Season fillets with salt and pepper. Heat oil in a skillet over medium heat. Cook salmon skin-side up for 5 minutes, then flip and cook until done. Remove and set aside.
  2. In the same skillet, melt butter. Add garlic and cook for 1 minute. Toss in roasted red peppers and sauté for 2 minutes.
  3. Add spinach and cook until wilted, stirring occasionally.
  4. Lower the heat. Pour in Half & Half, Parmesan, red pepper flakes, parsley, salt, and pepper. Simmer and stir until creamy.
  5. Add salmon back into the pan. Spoon sauce over the top and heat through. Serve with pasta, rice, or veggies.

Notes

  • For a spicier kick, increase the amount of red pepper flakes.
  • This dish pairs well with a side of garlic bread or a fresh salad.
