Description

Creamy Corn Soup is a rich and velvety soup that’s perfect for a delightful dinner. This comforting dish combines sweet corn with creamy ingredients for a delicious flavor.


Ingredients

  • 3 tablespoons butter
  • 1 large yellow potato, peeled and diced (approximately 910 ounces or 1 ½ cups diced)
  • ½ cup chopped onion (white or yellow)
  • 3 cloves garlic, minced
  • 3 cups low-sodium chicken broth
  • 5 cups corn kernels, divided
  • 1 cup heavy cream, at room temperature
  • 12 tablespoons fresh lime juice (juice from approximately 1 medium lime)
  • Salt to taste
  • Pepper to taste
  • Chopped fresh chives or chopped fresh cilantro (optional for serving)
  • Lime wedges (optional for serving)

Instructions

  1. Heat a large pot over medium heat. When warm, add the butter and let it melt, swirling occasionally to distribute it.
  2. Once melted but not browned, add diced potatoes, chopped onions, and minced garlic. Stir and simmer for 5-6 minutes until onions are very soft and potatoes begin to soften.
  3. Add chicken broth and 4 cups of corn kernels, stirring to incorporate and scraping any bits stuck to the pot’s bottom.
  4. Increase heat to medium-high and bring to a boil. Once boiling, reduce heat to medium-low and simmer uncovered for 10-12 minutes until the potatoes and corn are tender.
  5. Once tender, remove the pot from heat and let cool slightly. Use an immersion blender to purée the mixture until smooth (see notes for traditional blender instructions).
  6. Add heavy cream and stir until fully incorporated.
  7. Return pot to medium-low heat and stir in the remaining 1 cup of corn kernels and lime juice. Season with salt and pepper to taste, and simmer for 5 minutes or until the corn kernels are tender.
  8. Divide soup into portions and top with chopped chives or cilantro if desired. Serve warm with lime wedges if using.

Notes

  • Use fresh corn kernels for best flavor. Frozen corn can be a substitute.
  • If using a traditional blender, allow the soup to cool slightly before blending in batches and be careful of hot liquid.
