- 2 cups cottage cheese
- 6 large eggs
- 1/2 cup diced bell pepper
- 1 cup shredded cheese (cheddar, mozzarella, or a mix)
- 1 cup chopped spinach
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup chopped onion
- Fresh herbs for garnish (optional)
- Sliced tomatoes or avocado for serving (optional)
Instructions
- Preheat oven to 375°F (190°C) and grease an 8×8-inch baking dish.
- Whisk eggs in a large bowl, then stir in cottage cheese.
- Add shredded cheese, spinach, bell pepper, onion, garlic powder, onion powder, salt, and pepper. Mix well.
- Pour into the baking dish and spread evenly.
- Bake for 35–40 minutes until set and golden on top.
- Let rest 5–10 minutes before slicing.
- Garnish with fresh herbs and serve with tomatoes or avocado.
