Description

A wholesome and nutritious bake made with cottage cheese and a variety of vegetables, perfect for a healthy meal.


Ingredients

  • 2 cups cottage cheese
  • 6 large eggs
  • 1/2 cup diced bell pepper
  • 1 cup shredded cheese (cheddar, mozzarella, or a mix)
  • 1 cup chopped spinach
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup chopped onion
  • Fresh herbs for garnish (optional)
  • Sliced tomatoes or avocado for serving (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and grease an 8×8-inch baking dish.
  2. Whisk eggs in a large bowl, then stir in cottage cheese.
  3. Add shredded cheese, spinach, bell pepper, onion, garlic powder, onion powder, salt, and pepper. Mix well.
  4. Pour into the baking dish and spread evenly.
  5. Bake for 35–40 minutes until set and golden on top.
  6. Let rest 5–10 minutes before slicing.
  7. Garnish with fresh herbs and serve with tomatoes or avocado.
