- 1 loaf brioche bread (about 1 pound), cut into 1-inch cubes
- 6 large eggs, room temperature
- 2 cups whole milk, room temperature
- 1/3 cup granulated sugar
- 2 teaspoons pure vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon kosher salt
- 4 tablespoons unsalted butter, melted
- 1/2 cup granulated sugar (for topping)
- 2 teaspoons ground cinnamon (for topping)
- 3 tablespoons unsalted butter, melted (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 12-cup standard muffin tin.
- Cut the brioche into uniform 1-inch cubes and set aside.
- In a large mixing bowl, whisk together the eggs, milk, sugar, vanilla extract, cinnamon, nutmeg, and salt until well combined.
- Add the cubed brioche to the custard mixture and gently fold until all pieces are coated. Let it stand for 15 minutes.
- Prepare the cinnamon-sugar topping by combining the sugar and cinnamon in a small bowl.
- After 15 minutes, drizzle the melted butter over the bread mixture and fold gently to combine.
- Divide the mixture evenly among the muffin cups and brush the tops with melted butter.
- Sprinkle the cinnamon-sugar mixture generously on top of each muffin.
- Bake for 22-25 minutes until golden brown and a toothpick comes out clean.
- Allow the muffins to cool in the pan for 5 minutes before transferring to a wire rack.
Notes
- For best results, use slightly stale brioche bread.
- These muffins can be served warm or at room temperature.
- Store leftovers in an airtight container for up to 3 days.
