Description

Ingredients

  • 1 loaf brioche bread (about 1 pound), cut into 1-inch cubes
  • 6 large eggs, room temperature
  • 2 cups whole milk, room temperature
  • 1/3 cup granulated sugar
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon kosher salt
  • 4 tablespoons unsalted butter, melted
  • 1/2 cup granulated sugar (for topping)
  • 2 teaspoons ground cinnamon (for topping)
  • 3 tablespoons unsalted butter, melted (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 12-cup standard muffin tin.
  2. Cut the brioche into uniform 1-inch cubes and set aside.
  3. In a large mixing bowl, whisk together the eggs, milk, sugar, vanilla extract, cinnamon, nutmeg, and salt until well combined.
  4. Add the cubed brioche to the custard mixture and gently fold until all pieces are coated. Let it stand for 15 minutes.
  5. Prepare the cinnamon-sugar topping by combining the sugar and cinnamon in a small bowl.
  6. After 15 minutes, drizzle the melted butter over the bread mixture and fold gently to combine.
  7. Divide the mixture evenly among the muffin cups and brush the tops with melted butter.
  8. Sprinkle the cinnamon-sugar mixture generously on top of each muffin.
  9. Bake for 22-25 minutes until golden brown and a toothpick comes out clean.
  10. Allow the muffins to cool in the pan for 5 minutes before transferring to a wire rack.

  • For best results, use slightly stale brioche bread.
