Ingredients

- 1 cup shredded coconut
- 1/2 cup maraschino cherries, chopped
- 1/4 cup sweetened condensed milk
- 1/2 teaspoon vanilla extract
- 2 cups dark chocolate, melted
- Additional shredded coconut for coating
Instructions
- In a bowl, mix shredded coconut, chopped maraschino cherries, sweetened condensed milk, and vanilla extract until well combined.
- Roll the mixture into small truffle-sized balls and place them on a baking sheet lined with parchment paper. Chill in the refrigerator for 30 minutes.
- Dip each chilled truffle ball into melted dark chocolate, coating evenly.
- Roll the chocolate-coated truffles in shredded coconut.
- Place the truffles back on the parchment paper and refrigerate until the chocolate sets.
Notes
- For a richer flavor, use high-quality dark chocolate.
- Store truffles in an airtight container in the refrigerator.
- These truffles can be made ahead of time and stored for up to a week.
