- 4 large onions, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 tablespoon brown sugar
- 1 teaspoon fresh thyme leaves
- Salt and pepper to taste
- 1/4 cup water
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the sliced onions and a pinch of salt, stirring to coat the onions evenly with the oil.
- Cook the onions, stirring occasionally, for about 10 minutes until they begin to soften and turn golden.
- Reduce the heat to low and continue cooking for an additional 25-30 minutes, stirring frequently. The onions should become deeply caramelized and sweet.
- Add the balsamic vinegar and brown sugar to the skillet, stirring to combine.
- Pour in the water and sprinkle in the fresh thyme leaves. Continue cooking for another 5-10 minutes, allowing the mixture to thicken.
- Taste and adjust seasoning with salt and pepper as needed.
- Remove from heat and let cool slightly before transferring to a clean jar for storage.
