Description

Ingredients

  • 4 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon brown sugar
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste
  • 1/4 cup water

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the sliced onions and a pinch of salt, stirring to coat the onions evenly with the oil.
  2. Cook the onions, stirring occasionally, for about 10 minutes until they begin to soften and turn golden.
  3. Reduce the heat to low and continue cooking for an additional 25-30 minutes, stirring frequently. The onions should become deeply caramelized and sweet.
  4. Add the balsamic vinegar and brown sugar to the skillet, stirring to combine.
  5. Pour in the water and sprinkle in the fresh thyme leaves. Continue cooking for another 5-10 minutes, allowing the mixture to thicken.
  6. Taste and adjust seasoning with salt and pepper as needed.
  7. Remove from heat and let cool slightly before transferring to a clean jar for storage.
