- 2 large sweet potatoes, peeled and diced
- 1 pound cooked chicken, shredded
- 1/2 cup buffalo sauce (adjust to taste)
- 1 cup shredded cheddar cheese
- 1/2 cup cream cheese, softened
- 1/2 cup Greek yogurt
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 2 green onions, sliced (for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- In a large pot, bring water to a boil and add the diced sweet potatoes. Cook for about 15 minutes, or until tender. Drain and return to the pot.
- Add the shredded chicken, buffalo sauce, cream cheese, Greek yogurt, garlic powder, onion powder, salt, and pepper to the sweet potatoes. Mix well until everything is combined and creamy.
- Transfer the mixture to a greased 9×13 inch baking dish. Spread it out evenly and top with shredded cheddar cheese.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it cool for a few minutes. Garnish with sliced green onions before serving.

- Adjust the amount of buffalo sauce according to your spice preference.
- For a healthier option, you can use low-fat cream cheese and Greek yogurt.
- This casserole can be made ahead of time and stored in the refrigerator before baking.
