Description

A delicious twist on traditional casseroles, this Buffalo Chicken Sweet Potato Casserole combines the flavors of buffalo chicken with creamy sweet potatoes.


Ingredients

  • 2 large sweet potatoes, peeled and diced
  • 1 pound cooked chicken, shredded
  • 1/2 cup buffalo sauce (adjust to taste)
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese, softened
  • 1/2 cup Greek yogurt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 green onions, sliced (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large pot, bring water to a boil and add the diced sweet potatoes. Cook for about 15 minutes, or until tender. Drain and return to the pot.
  3. Add the shredded chicken, buffalo sauce, cream cheese, Greek yogurt, garlic powder, onion powder, salt, and pepper to the sweet potatoes. Mix well until everything is combined and creamy.
  4. Transfer the mixture to a greased 9×13 inch baking dish. Spread it out evenly and top with shredded cheddar cheese.
  5. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  6. Remove from the oven and let it cool for a few minutes. Garnish with sliced green onions before serving.
