Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 4 slices bacon, cooked and crumbled
  • 1 cup cherry tomatoes, halved
  • 1 cup romaine lettuce, chopped
  • 1/4 cup green onions, sliced
  • 1/2 cup mayonnaise (or Greek yogurt for a lighter option)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 avocado, diced (optional)
  • 1/4 cup shredded cheese (cheddar or mozzarella) (optional)
  • 1 teaspoon smoked paprika or cayenne (optional)

Instructions

  1. Cook the chicken by grilling, baking, or poaching it until fully cooked, then shred or dice it.
  2. Prepare the vegetables by washing and chopping the romaine lettuce and halving the cherry tomatoes.
  3. Make the dressing by combining mayonnaise (or Greek yogurt), Dijon mustard, lemon juice, garlic powder, salt, and pepper in a bowl and whisking until smooth.
  4. In a large bowl, combine the cooked chicken, crumbled bacon, cherry tomatoes, chopped romaine, and green onions. Pour the dressing over and toss gently to combine.
