- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- Salt and black pepper, to taste
- 1/2 cup cornstarch
- 2 tablespoons vegetable oil
- 1 cup cooked jasmine rice
- 1 cup shredded purple cabbage
- 1 cup shredded carrots
- 1/2 cup sliced cucumbers
- 1/4 cup chopped green onions
- 1 tablespoon sesame seeds (optional)
- For the Bang Bang Sauce:
- 1/3 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha (adjust to taste)
- 1 tablespoon honey
- 1 teaspoon rice vinegar
Instructions
- In a small bowl, whisk together all the sauce ingredients until smooth. Set aside.
- Season chicken pieces with salt and pepper, then toss in cornstarch until fully coated.
- Heat oil in a skillet over medium heat. Add chicken pieces and cook until golden brown and fully cooked, about 6–8 minutes, turning as needed. Drain on paper towels.
- Toss the crispy chicken in the bang bang sauce until evenly coated.
- In serving bowls, layer cooked jasmine rice, cabbage, carrots, and cucumbers.
- Top with the saucy bang bang chicken, then garnish with green onions and sesame seeds.
- Serve warm and enjoy!
